- Forming the Dough: Continue cooking on low heat, stirring constantly, until the mixture thickens and starts to leave the sides of the pan. It should form a soft, pliable dough. This usually takes about 5-7 minutes.
- Knead and Roll: Transfer the hot dough onto a ghee-greased surface or parchment paper. Be cautious as it will be very hot. Once it’s cool enough to handle, knead the dough gently for a few minutes until it’s smooth.
- Shape the Kaju Katli: Place another sheet of parchment paper on top of the dough and roll it out evenly using a rolling pin to your desired thickness (typically ¼ inch).
- Cut and Garnish: Let the rolled-out dough cool slightly. Once firm, cut it into traditional diamond shapes using a sharp knife or a pizza cutter. If desired, gently press saffron onto the Kaju Katli for an authentic look.
